Combine vinegar, water, sherry, sugar, chili flakes, ginger, garlic, and tamari in a saucepan.
Bring to a boil over medium heat, stirring to dissolve sugar.
Simmer for about 5 minutes.
Stir in cornstarch slurry and cook until sauce thickens.
Remove from heat and let cool.
