Classic Southern deviled eggs with a creamy, tangy filling, always the first thing to disappear at any party.

Hard-boil eggs: place in a pot of cold water, bring to a boil, then cook for 10-12 minutes. Transfer to an ice bath to cool completely.
Peel eggs and halve lengthwise. Carefully remove yolks and place in a bowl.
Mash egg yolks with a fork until smooth.
Mix in mayonnaise, mustard, and pickle relish. Season with salt and pepper.
Taste and adjust seasoning as needed.
Spoon or pipe the yolk mixture back into the egg white halves.
Garnish with a sprinkle of paprika and fresh chives if desired.
Refrigerate until ready to serve.
