Unroll thawed puff pastry sheet on a lightly floured surface.
Spread softened cream cheese evenly over the surface.
Scatter chopped spinach, sun-dried tomatoes, and Parmesan over the cream cheese.
Roll the pastry tightly into a log from one end.
Slice the log into rounds about 1/2 inch thick.
Place pinwheels on a parchment-lined baking sheet.
Brush tops with egg wash.
Bake at 400 degrees F for about 20 minutes until golden and puffed.
