The Preparation
In a large bowl, whisk together flour, baking powder, salt, pepper, and cayenne.
In a separate bowl, whisk together eggs and milk.
Add the wet ingredients to the dry and stir until just combined.
Fold in corn kernels, green onions, and cheddar cheese.
Heat about 1/4 inch of vegetable oil in a skillet over medium-high heat.
Drop batter by heaping spoonfuls into the hot oil, flattening slightly.
Fry for 2-3 minutes per side until golden brown and cooked through.
Drain on paper towels. Serve hot with chipotle honey mayo.
