Mix together cream cheese, powdered sugar, and minced shallot until smooth.
Place about 1 teaspoon of filling in the center of a wonton wrapper.
Wet the edges with water. Fold into a triangle and press to seal, or bring all four corners up to meet in the center and pinch closed.
Heat oil to 350°F in a heavy pot.
Fry wontons in batches until golden brown and crispy, about 2-3 minutes.
Drain on paper towels.
Serve hot with sweet and sour sauce or duck sauce.
