Caramelized figs crowned with honeyed mascarpone and crumbled crispy bacon.
7 steps, about 22 minutes start to finish.
Fry bacon in a pan until crispy; remove and crumble. Reserve 1-2 tablespoons of bacon fat in the pan.
Mix mascarpone with honey in a small bowl.
Place figs cut-side down in the bacon fat over medium-high heat.
Cook 1-2 minutes until caramelized and lightly browned.
Arrange figs on a plate, cut-side up.
Dollop mascarpone-honey mixture on each fig half.
Top with crumbled bacon and serve.
“Cook the figs cut-side down in the reserved bacon fat so they caramelize and pick up that smoky richness. Work fast once they're browned, a minute or two is plenty before they turn to jam.”
