Cognac-Dijon Mushroom Pan Sauce

The preparation

    Heat a large skillet over high heat until very hot.

    Add mushrooms to a dry pan in a single layer.

  3. 03

    No fat, no salt yet.

  4. 04

    Sear undisturbed for 3–4 minutes until deeply golden on one side.

  5. 05

    Add butter, garlic, and thyme.

  6. 06

    Cook another 2 minutes, stirring occasionally.

  7. 07

    Deglaze with Cognac.

  8. 08

    Scrape up all the fond from the pan.

    Add Dijon and heavy cream.

    Stir to combine.

    Reduce over medium heat until sauce coats the back of a spoon, about 3–4 minutes.

    Taste, season, finish with fresh parsley off heat.

    Hold warm.

“Sear the mushrooms in a dry, hot pan with no salt at first, since salt pulls out their water and they'll steam instead of browning. When you add the Cognac, scrape up every bit of browned fond, because that's where the whole sauce gets its flavor.”
