A classic margarita built by the pitcher: blanco tequila, orange liqueur, fresh lime and just enough agave to round the edges, poured over ice into a salt-rimmed glass. Built once, poured all night. It is the drink for a plate of fat and char because acid and salt are what cut through them, and because nobody with a pizza peel in one hand should be shaking cocktails with the other.
6 steps, about 10 minutes start to finish.
1. JUICE THE LIMES AHEAD: 8 oz is about 8 limes. Do it at 4:30 with the rest of the prep and keep the juice covered in the fridge. Cut two more limes into wedges.
2. Combine the tequila, Cointreau, lime juice and 2 oz of agave in a pitcher. Stir 20 seconds.
3. TASTE IT. If the limes were sharp, add the third ounce of agave. If it tastes right, stop. The pitcher is meant to lean tart because it is going against cheese and char.
4. Chill the pitcher in the fridge until 7:05. No ice in the pitcher; ice goes in the glasses, so the last pour at 8:10 tastes like the first.
5. RIM: run a lime wedge around the outer edge of each glass and roll the outside in kosher salt. Outside only, so the first sip is the drink and not a mouthful of salt.
6. Fill the glass with ice, pour about 4 oz over it, drop a lime wedge in.
“The ratio is 2:1:1 with a whisper of agave, which is the Daisy that the margarita started life as, and it is more or less the same as the two-cup version from Ep 232 scaled to a pitcher. Salt on the rim rather than in the pitcher means the people who do not want it can skip it. Blanco is deliberate: reposado is nice but it is smoother and sweeter, and this drink is here to be sharp. Keep the pitcher in the shade or in a cooler once it comes outside, because a pitcher of margarita left on a sunny patio next to a wood oven is warm inside of twenty minutes. A second pitcher is the same numbers and the same limes, so have eight more if it is going well. Nothing in this drink is a bottle you will be staring at next summer.”
