The preparation

    Preheat oven to 375°F. Spray a casserole dish.

  2. 02

    Drain the canned chicken and add to a large bowl.

  3. 03

    Add cream of chicken soup, evaporated milk, drained mushrooms, drained pimentos, uncooked minute rice, melted butter, slivered almonds, and chopped water chestnuts.

    Season with salt and pepper. Mix everything together.

    Pour mixture into the prepared casserole dish.

    Bake uncovered at 375°F for 45 minutes, until rice is cooked through and mixture is bubbly.

    While casserole bakes, warm cream of mushroom soup in a small saucepan over low heat. Dilute with a splash of milk.

    When casserole is done, pour the warm diluted mushroom soup over the top. Serve.
