Mai Tai

A tiki classic with a blue twist, mixing white rum, lime, and almond orgeat under a dark rum float.

The preparation

6 steps, about 30 minutes start to finish.

  1. 01

    Squeeze fresh limes to get 3/4 oz juice per drink.

  2. 02

    Combine white rum, lime juice, Blue Curaçao, and orgeat in a shaker with ice.

  3. 03

    Shake well until cold.

  4. 04

    Pour into a tiki glass or rocks glass over ice.

  5. 05

    Float dark rum on top. Pour gently over the back of a spoon.

  6. 06

    Garnish with a mint sprig and the spent lime shell.

“Vietnam-era tiki culture inspired. Very boozy. Doug recommends skipping the 151 float and using regular dark rum. Casino versions substitute amaretto, orange juice, and pineapple juice for orgeat, which Doug preferred.”
