The Preparation
Combine bread flour, dry milk, potato flour, sugar, yeast, and salt in a stand mixer bowl.
Add eggs, milk, and warm water. Mix with dough hook until combined.
Add butter a tablespoon at a time while kneading, brioche-style.
Knead for about 10 minutes until dough passes the window pane test.
Place in a greased bowl, cover, and let rise for 1 hour.
Punch down, shape into a loaf, and place in a greased loaf pan.
Let rise for another 1 hour until doubled.
Place a pan of water in the bottom of the oven for steam.
Bake at 400F for 40 minutes until internal temperature reaches 195F.
