Golden, puffy fry bread, crisp outside and pillowy within.
9 steps, about 35 minutes start to finish.
Combine flour, baking powder, sugar, and salt in a bowl.
Add lard or shortening and mix in.
Add warm water gradually and mix until a soft dough forms. Aim for about 1 cup but add more as needed.
Knead dough (a stand mixer with dough hook works well) until smooth and elastic.
Let dough rest for 30 minutes.
Pull off pieces of dough and roll out thin on a floured surface.
Cut into sections with a pizza cutter.
Fry in hot oil until golden and puffed, flipping once.
Drain and serve.
