Esquites Fritters

Crispy fried corn fritters spiced with chili and studded with jalapeno, street-corn style.

The preparation

8 steps, about 25 minutes start to finish.

    Mix flour, cornmeal, baking powder, salt, sugar, chili powder, and black pepper

  2. 02

    Add buttermilk and melted butter; stir to combine

  3. 03

    Fold in corn kernels and diced jalapeno

  4. 04

    Heat oil to approximately 350°F

  5. 05

    Drop spoonfuls of batter into hot oil

  6. 06

    Fry approximately 2 minutes per side until golden brown

  7. 07

    Drain on paper towels

  8. 08

    Serve with dipping sauce
