A buttery Ritz-cracker crust filled with sweet Vidalia onions, cheddar, and creamy custard.
7 steps, about 55 minutes start to finish.
Preheat oven to 350°F.
Mix crushed Ritz crackers with melted butter and press into a pie dish to form crust.
Sauté sliced Vidalia onions in butter over medium heat until soft and translucent.
Whisk together eggs and milk to make a custard.
Layer cooked onions in crust and pour custard over.
Top with shredded cheddar and a sprinkle of paprika.
Bake for 30 minutes until set and golden.
“Cook the Vidalias down until soft and sweet before they go in the crust, since they won't soften much more inside the custard. Bake just until the center is set and no longer jiggly so the filling stays creamy.”
