The Preparation
Preheat oven to 350°F.
Mix crushed Ritz crackers with melted butter and press into a pie dish to form crust.
Sauté sliced Vidalia onions in butter over medium heat until soft and translucent.
Whisk together eggs and milk to make a custard.
Layer cooked onions in crust and pour custard over.
Top with shredded cheddar and a sprinkle of paprika.
Bake for 30 minutes until set and golden.
