The Preparation

Sauté onion and bell pepper in olive oil

Add garlic, cumin, paprika, and cayenne

Add crushed tomatoes and simmer until slightly thickened

Make wells in sauce and crack eggs into them

Cover and cook until eggs are set to desired doneness

Top with feta and fresh herbs
