The Preparation
Hard-boil eggs for 14 minutes, then shock in ice bath and peel.
Divide breakfast sausage into 1/4 lb portions.
Flatten each portion and wrap completely around a peeled hard-boiled egg.
Set up breading station: flour, beaten egg, breadcrumbs.
Roll each sausage-wrapped egg in flour, then egg wash, then breadcrumbs.
Fry at 350F for 5-7 minutes until sausage is cooked through and coating is golden.
Drain on paper towels.
Slice in half and serve with mustard.
