Slice salmon very thin against the grain
Keep fish chilled until plating
Prep three different toppings/sauces
Classic: olive oil, lemon, capers, dill
Asian-style: soy sauce, sesame oil, ginger
Citrus: orange/grapefruit segments, red onion, herbs
Arrange salmon on chilled plates
Top each with different preparation
Finish with flaky salt
