The Preparation
Blend or muddle fresh peach into a smooth puree.
Spoon about 2 oz of peach puree into the bottom of a champagne flute.
Add peach schnapps if using.
Slowly top with chilled Prosecco, pouring gently to preserve bubbles.
Stir lightly and garnish with a fresh mint sprig.
Serve immediately.
