Lemon Posset

The preparation

8 steps, about 10 minutes start to finish.

    Combine heavy cream and sugar in a saucepan.

  2. 02

    Heat over medium, stirring, until it reaches just below a boil (a simmer).

    Remove from heat.

    Stir in lemon zest and lemon juice. The acid will thicken the cream.

    Let cool to room temperature (about 30 minutes on the counter).

    Pour into ramekins or small serving dishes.

  7. 07

    Refrigerate for at least 2 hours until set.

  8. 08

    Serve topped with fresh berries.

“The lemon juice is what actually sets the posset, so add it off the heat and don't be tempted to cut the amount. Then give it the full two hours in the fridge, since that's when it firms from liquid cream into a set custard.”
