Jamaican Beef Patty Dough

The preparation

6 steps, about 15 minutes start to finish.

  1. 01

    Combine flour, salt, and turmeric (or curry powder) in a food processor. No sugar in this version.

  2. 02

    Add lard in pieces and pulse to cut into the flour.

  3. 03

    Slowly stream in ice water while pulsing, starting with half a cup and adding more as needed.

  4. 04

    The dough will have a yellow color from the turmeric. It should come together but may need hand mixing if the machine doesn't fully incorporate.

    Form into a ball, wrap in plastic, and refrigerate for at least 1 hour.

  6. 06

    When ready, roll out and cut into rounds for patties.
