Bourbon, fresh lemon, and a heaped spoonful of the berry jam, shaken hard and strained over ice. The jam brings the sugar and the fruit in one spoon, so there is no syrup to make, and the foam that was skimmed off the pot is exactly the right thing to put in a shaker. Tart, jammy, and the color of the jar it came from.
4 steps, about 3 minutes start to finish.
1. Bourbon, lemon juice and jam into a shaker. Egg white too, if using, and shake 15 seconds with no ice first so it foams.
2. Fill the shaker with ice and shake hard for 15 seconds, until the outside is frosted. The jam has seeds and bits, and the shaking is what breaks it down.
3. Double strain through the shaker's strainer and a fine mesh strainer into a rocks glass full of fresh ice.
4. Lemon wheel on the rim, one berry on top.
“Every jam makes a different sour, and that is the recipe: a spoonful of whatever is in the fridge door. Sweeter jams want a full ounce of lemon; this one is on the tart side of a jam, so ¾ is right. Skip the egg white and it is still a good drink, just a clear one. Double straining is not optional with a seeded jam unless you like raspberry seeds in your teeth.”
