Lay the cob down and halve it into two shorter pieces, then stand each upright and cut into quarters. Do not put your hand under the knife; bang the knife down through the cob. Breakage is fine.
Toss the ribs with the olive oil, then sprinkle the seasoning over gradually, tossing between passes, to coat evenly.
Make the garlic butter: melt the butter, add the garlic, cook about 20 seconds until fragrant. Set aside warm.
Bake at 375 F, kernel side up on a wire rack over a sheet pan, about 20 minutes: cooked through but not dried out, pulled early on purpose.
Move the rack 4-6 inches under a high broiler and broil kernel side up 3-5 minutes, watching the whole time, until charred spots appear and the ribs curl. Flip for another minute or two for char on more sides.
Toss the hot ribs in the warm garlic butter, pile up, garnish with parsley, and eat like ribs.
