Soft butter whipped with honey and a pinch of cayenne, spread on flour tortillas warmed in a dry skillet until they blister. Sweet, a little heat, and the closest thing to a sopapilla with honey you can make in ten minutes.
4 steps.
1. WHIP the softened butter with a hand mixer for 1 minute.
2. Add the honey, cayenne and salt. Whip 1 minute more, until pale and fluffy. Taste and adjust the cayenne.
3. WARM THE TORTILLAS in a dry cast iron skillet over medium-high, 20 to 30 seconds per side, until they puff and blister. Stack them in a clean towel.
4. Spread with honey butter, add flaky salt and a dust of cayenne, roll up and eat hot.
“The heat builds after you swallow, so taste, wait, then add more. Dry pan, no oil, so the tortillas blister instead of fry. Leftover honey butter keeps a week in the fridge.”
