Vodka and the juice of a whole lemon over ice in a salt-rimmed highball, topped with cold club soda. Lubbock's house drink, which nobody can trace past a legend about a Dr. Chilton asking a country club bartender for exactly this. Bright, salty, fizzy, and the right thing next to a tray of cheese.
5 steps, about 3 minutes start to finish.
1. Run a lemon wedge around the rim of a highball glass and dip the rim in a plate of kosher salt.
2. Fill the glass with ice.
3. Add the vodka and the lemon juice.
4. Top with club soda and stir once, gently, from the bottom.
5. Lemon wedge on the rim.
“Fresh lemon is not optional; the whole drink is three things and the lemon is the one with flavor. For a crowd, stir 8 oz vodka and 4 oz lemon juice in a pitcher, pour 3 oz into each salted glass over ice, and top each one with soda at the glass so the fizz is fresh. It is a lemon ranch water with a salt rim, if that helps anyone picture it.”
