Buttery shortbread deepened with nutty browned butter and fragrant cardamom, crisp at the edges.
8 steps, about 40 minutes start to finish.
Brown the butter in a saucepan over medium heat, stirring often until golden and nutty smelling. Allow to cool and solidify.
Beat cooled browned butter with powdered sugar until light.
Mix in vanilla.
Add flour, cardamom, and salt and mix until dough just comes together.
Press dough into a parchment-lined pan or roll out and cut into shapes.
Refrigerate for 30 minutes.
Bake at 325°F for 18-22 minutes until lightly golden at the edges.
Cool completely before cutting or serving.
“Let the browned butter cool and firm back up before you cream it, otherwise the dough turns greasy and won't hold its shape. Chill the shaped dough before baking and pull it when just the edges turn gold, since shortbread should stay pale and tender.”
