Benedictine Dip

Louisville's cool, creamy cucumber dip, with cream cheese whipped together with grated cucumber, onion, and fresh dill.

The preparation

6 steps, about 31 minutes start to finish.

  1. 01

    Grate peeled, seeded cucumber on large holes of a box grater (about 1 cup).

  2. 02

    Pile grated cucumber into a clean kitchen towel and squeeze hard over the sink. Get it as dry as possible.

  3. 03

    Beat softened cream cheese and sour cream with a hand mixer until smooth and fluffy, about 1 min.

  4. 04

    Fold in cucumber, onion, dill, chives, lemon juice, salt, and cayenne. Stir until combined.

    Add food coloring if using. Cover and chill at least 30 min (overnight is even better).

  6. 06

    Serve in a shallow bowl, topped with extra dill and cucumber ribbons. Surround with crackers and crudités.

“Squeeze the cucumber DRY. This is the most important step. Excess water makes the dip runny and sad. A clean kitchen towel works better than paper towels for this.”
