Chop all the deli meats and cheese into small, uniform pieces, roughly 1/4-inch dice so everything scoops up easily.
Halve the cherry tomatoes, then chop the pepperoncini (or giardiniera) and red onion and shred the lettuce.
Combine the meats, cheese, pepperoncini, tomatoes, and red onion in a large bowl.
Add the mayonnaise, Italian dressing (or both), red wine vinegar, and dried oregano, and toss to coat everything evenly.
Season with salt and pepper to taste, then fold in the shredded lettuce last so it stays crisp.
