A silky whiskey sour with almond amaretto and a frothy egg-white cap.
6 steps, about 5 minutes start to finish.
Add amaretto, whiskey, lemon juice, simple syrup, and egg white to a cocktail shaker WITHOUT ice.
Dry shake vigorously for 15 seconds to emulsify the egg white.
Add ice to the shaker.
Shake again for 30 seconds until very cold.
Strain into a glass. The foam from the egg white should sit on top.
Garnish with a cocktail cherry.
“The dry shake without ice comes first and it matters, that's what whips the egg white into foam. Then add ice and shake again until very cold, and the frothy cap will set up on top when you strain.”
