Thanksgiving Turkey with Compound Butter and Aromatics

The preparation

    Thanksgiving Morning Prep: Remove the Turkey from the Fridge: Take the turkey out of the fridge about 30–60 minutes before roasting to allow it to come closer to room temperature.

    Pat the Turkey Dry: Use paper towels to pat the turkey thoroughly dry, inside and out. Dry skin = crispier skin.

    Apply Compound Butter: Carefully separate the turkey skin from the meat over the breast and thighs without tearing the skin.

    Rub half of the compound butter under the skin directly onto the meat.

  5. 05

    Rub the remaining butter over the outside of the skin, coating evenly.

    Add Aromatics to the Cavity: Place the sliced apple, onion, cinnamon stick, rosemary sprigs, and sage leaves inside the turkey cavity.

    If roasting in the oven, you can add 1 cup of water into the roasting pan to prevent drippings from burning early on.

    Roasting Instructions: If Oven Roasting: Preheat your oven to 325F.

    Place turkey breast-side up on a roasting rack inside a large roasting pan.

    Roast for about 15 minutes per pound.

    Tent loosely with foil if the skin begins to brown too quickly.

    Begin checking internal temperature about halfway through expected time.

    If Smoking: Preheat smoker to 275F–300F.

    Smoke the turkey for approximately 3.5 to 5.5 hours depending on smoker stability and turkey size.

    Use a pan with water under the bird to keep the smoker moist if needed.

    Internal Temperature Targets: Breast meat: 160–165F; Thigh meat: 170–175F.

    Always check with an instant-read thermometer in the thickest part of the breast and the innermost part of the thigh (without touching bone).

    Resting the Turkey: Remove the turkey from the oven or smoker once it hits target temperatures.

    Tent it loosely with foil.

    Let rest for 20–30 minutes before carving. (Resting redistributes the juices and keeps the meat moist.)
