Preheat oven to 350°F. Butter a 2.5-quart baking dish well.
Cut corn kernels off the cob and allow to rest in a bowl to collect the corn milk.
In a large mixing bowl, combine corn kernels (with their juices), milk, heavy cream, cheddar cheese, eggs, cayenne, salt, and pepper.
Mix until well combined.
Pour mixture into the prepared baking dish.
Bake for 35 minutes or until set and lightly golden on top.
Let rest 10 minutes before serving.
