Caramelized Onion Dip

The preparation

    Halve the onions through the root, then slice thin. Even slices caramelize evenly.

    Melt the butter with the olive oil over medium-low heat. Add the onions, salt, and sugar. Cook, stirring every few minutes, until deep golden brown, about 35 to 45 minutes. Do not rush it or crank the heat. Stir in the Worcestershire near the end.

    Let the onions cool, then chop them roughly so you get sweet bits throughout the dip rather than long strands.

    Fold the onions into the sour cream, mayonnaise, Lipton soup mix, garlic powder, chives, green onions, and pepper. Taste and add salt as needed.

    Cover and refrigerate at least 2 hours, ideally overnight. The flavor deepens as it sits. Serve cold.
