The Preparation
Let butter and cream cheese come to room temperature.
Mix grated cheddar, softened butter, and cream cheese together until well combined.
Add splashes of white wine and sherry, mixing to incorporate.
Add horseradish, green onions, and parsley. Mix well.
Shape the cheese mixture into a ball or log.
Roll in chopped pecans to coat the outside.
Refrigerate until firm.
Serve with crackers.
