“Important Tips for 100% Whole Wheat Pitas: Sticky is good: the dough should be soft and just slightly tacky. Whole wheat absorbs water differently, so don't panic if it feels wetter. Gentle handling: after rolling, don't stack the raw pitas without a layer of flour or parchment between them, or they can stick and tear. Hydrate the Bran: that extra 10–15 minute post-knead rest is critical. It makes the bran softer, the dough more supple, and gives a better puff. Softer Pitas: cover the baked pitas immediately with a clean towel to trap steam and keep them tender. Storage: cool completely and store in a zip-top bag at room temp for up to 3 days. Freeze for up to 2 months. Thaw and reheat wrapped in foil or briefly toasted. Flavor Enhancements: add a spoonful of plain yogurt (¼ cup) for a softer, slightly tangier pita.
