Creamy Corn Pasta with Homemade Italian Sausage

The preparation

    Char the Corn: Cut kernels off the cobs (if using fresh).

    Heat a large skillet (preferably cast iron) over medium-high. Add 1 tablespoon butter and a drizzle of olive oil. Add corn kernels in a single layer, season with salt, and let them char and blister in spots, stirring occasionally (5–7 minutes).

    Reserve 1 cup of charred corn for finishing; keep the rest in the skillet.

    Cook the Sausage: In the same skillet (push the corn to the side if you have space, or transfer most corn to a bowl), add the Italian sausage. Break it up with a spatula and cook until deeply browned and cooked through, 5–8 minutes.

    Drain off excess fat if needed, but leave a couple tablespoons for flavor.

    Cook the Pasta: Bring a large pot of salted water to a boil. Cook pasta until just al dente. Reserve 1.5 cups pasta water, then drain.

    Build the Sauce: To the skillet with sausage and most of the corn, add the shallot. Cook over medium heat until soft, 2–3 minutes.

    Add garlic, red pepper flakes, and smoked paprika. Sauté until fragrant, about 1 minute.

    Pour in the heavy cream, Romano, and Parmesan. Let it come to a gentle simmer.

    Transfer about half the corn/sausage/cream mixture to a blender. Add lemon zest, lemon juice, and 1/2 cup pasta water. Blend until very smooth and creamy. Pour this back into the skillet, mix with the remaining corn/sausage/cream mixture.

    Finish the Pasta: Add the cooked pasta to the skillet with the sauce. Toss over medium-low heat, splashing in more reserved pasta water as needed to make everything glossy and saucy. Adjust salt, pepper, lemon, and cheese to taste.

    Swirl in the remaining tablespoon of butter for shine and richness.

    Fold in reserved charred corn, scallions, and most of the basil.

    Plate & Serve: Serve pasta in bowls. Top with more cheese, basil, chives or parsley, and a drizzle of good olive oil.

    Add a few dashes of hot sauce if desired for a punch.

    Optional: A squeeze of lemon or a spoonful of crème fraîche for extra brightness and richness.

“Sausage Variations: Both sweet and hot Italian sausage work. If yours is very fatty, you can drain a bit, but keep some fat for flavor. Add Greens: A handful of baby spinach or arugula folded in at the end will add color and freshness. Extra Crunch: Toasted pine nuts or breadcrumbs would be stellar sprinkled on top. Make-Ahead Tip: Char and blend the corn base ahead, then reheat with sausage for fast assembly.”
