Deep chocolate cookies with cool peppermint and a crown of crushed candy canes.
10 steps, about 40 minutes start to finish.
Cream butter and sugars together until light and fluffy.
Beat in eggs, vanilla, and peppermint extract.
In a separate bowl, whisk flour, cocoa powder, baking soda, and salt.
Add dry ingredients to wet ingredients and mix until combined.
Chill dough for 30 minutes.
Preheat oven to 350°F.
Scoop dough into balls and flatten slightly on parchment-lined baking sheets.
Bake 10-12 minutes. Do not overbake.
Press crushed candy canes on top immediately after removing from oven.
Cool completely before using for ice cream sandwiches.
