The preparation

7 steps, about 60 minutes start to finish.

  1. 01

Tear or cut the bread into 1-inch cubes. If fresh, spread on a baking sheet and let dry out for 30 minutes (or toast at 300°F for 10 minutes until lightly dried).

  2. 02

Preheat oven to 350°F. Butter a 9x13-inch baking dish.

  3. 03

In a large bowl, whisk together the eggs, milk, and melted butter until combined. Season with a pinch of salt and sugar to taste (about 2 tablespoons) and add vanilla extract if desired.

  4. 04

Add the bread cubes to the custard mixture and press down gently. Let soak for 15 minutes, pressing occasionally to ensure even absorption.

  5. 05

Transfer to the prepared baking dish and spread evenly.

  6. 06

Bake for 40–50 minutes until the top is golden brown and the custard is set. A knife inserted in the center should come out clean.

  7. 07

Let rest for 10 minutes before serving. Serve warm with a sauce of your choice.

lightbulb The chef's notes

“This is a base recipe: add raisins, cinnamon, nutmeg, bourbon, or chocolate chips to customize. Stale or day-old bread absorbs the custard best.”
