A big-batch margarita with a spicy kick, combining blanco tequila and fresh lime with ginger-spiked orange liqueur.
6 steps, about 75 minutes start to finish.
Make ginger simple syrup: combine 1 cup sugar, 1 cup water, and 4-5 inches sliced fresh ginger in a saucepan. Simmer 15 minutes. Strain. Chill.
Juice limes: fresh-squeeze until you have 2 cups. Strain for smoother texture.
In a large pitcher: combine tequila, lime juice, orange liqueur, and ginger simple syrup. Stir well.
Chill pitcher at least 1 hour. Don't add ice to the pitcher. It'll dilute.
Salt or Tajín the rim of each glass. Fill with fresh ice. Pour mix over. Garnish with lime wheel.
Fallback: if ginger syrup doesn't pass the taste test, swap for equal amount regular simple syrup.
“Make and taste-test the ginger syrup before the trip. If it doesn't work for you, regular simple syrup gives you a perfect classic margarita with zero wasted effort.”
