A garlicky mayonnaise stirred with sriracha and honey so it is sweet first and hot second, with lime to keep it bright and smoked paprika for the color. The sauce for the people who think tartar sauce is boring, and the one that disappears first. Also the dunk shot for the thumbnail: orange sauce, white fish, gold shell.
4 steps, about 5 minutes start to finish.
1. Grate the garlic to a paste. A microplane does it; a knife and a pinch of salt dragged across the board does it too.
2. Stir the garlic, sriracha, honey, lime juice, paprika and salt into the mayonnaise until it is one even orange.
3. Taste. More honey if the heat is sharp, more sriracha if it is dessert. It should finish with a slow warmth, not a sting.
4. Cover and refrigerate until the fish is fried. Keeps a week.
“This is a mayonnaise with garlic in it, which the Provençal purists would tell you is not an aioli, and they are right, and it is still what everyone calls it. Raw garlic gets stronger as it sits, so one clove is enough; make it a day ahead and it will taste like two. Swap the sriracha for a spoon of chili crisp if you want it crunchy.”
