The Preparation

Mix kimchi base with Prague powder #1.

Coat pork belly thoroughly with the kimchi cure.

Place in a zip-lock bag or vacuum seal.

Refrigerate for 7-10 days, flipping daily.

Rinse, form pellicle, and smoke the same as the classic cure.
