Creamy Pea Salad

A classic Midwestern potluck salad: sweet peas, crunchy bacon, sharp cheddar, and red onion in a creamy dressing.

The preparation

7 steps, about 22 minutes start to finish.

    Cook the bacon until crispy. Drain and crumble. Set aside.

    In a large bowl, combine the thawed peas, crumbled bacon, cheddar, Parmesan, and red onion.

    In a small bowl, whisk together the mayonnaise, vinegar, sugar, salt, and pepper.

    Pour the dressing over the pea mixture and stir gently to coat.

    Taste and adjust seasoning.

    Cover and refrigerate for at least 4 hours, or overnight. The salad is better after the flavors have had time to meld.

    Stir before serving and adjust seasoning again if needed.
