A sweet-hot pepper jelly with minced jalapeno and red bell pepper, glossy and bright.
6 steps, about 20 minutes start to finish.
Whisk water, sugar, corn syrup, vinegar, pectin, and cornstarch together in a saucepan.
Add minced jalapeño and diced red bell pepper.
Bring to a full boil over medium-high heat, stirring often.
Simmer for about 5 minutes until thickened.
Stir in red food coloring.
Remove from heat and let cool before serving.
“Bring it to a full boil so the pectin and cornstarch activate and the sauce thickens properly. Let it cool before serving, it sets up more as it comes down in temperature.”
