The Clover Club

Gin, lemon, raspberry, and egg white shaken into a pink cloud with a proper foam cap. It was the house drink of a Philadelphia gentlemen's club a century ago, then everyone decided a pink drink was embarrassing and it nearly vanished. Their loss.

The preparation

4 steps, about 5 minutes start to finish.

  1. 01

    1. Dry shake: combine the gin, lemon juice, raspberry syrup, and egg white with no ice and shake hard for 15 seconds. This is what builds the foam.

  2. 02

    2. Add ice and shake hard again for 15 seconds to chill and dilute.

  3. 03

    3. Double strain into a chilled coupe so no ice shards break the foam.

  4. 04

    4. Let it settle for a few seconds, then set the raspberries on top.

“The dry shake is not optional. Skip it and you get a thin pink drink instead of that dense cap of foam, because the egg white needs a turn in the tin without ice to whip up properly. For a version everyone can drink, leave out the gin, add another half ounce of lemon, and top with soda: the egg white still foams just fine.”
