7 steps, about 20 minutes start to finish.
Heat milk to 195-202°F
Add acid (vinegar or lemon juice)
Let sit for 30 minutes - curds will form
Strain through cheesecloth
Season with salt
Press lightly for firmer cheese or leave loose
Use in cooking or serve fresh
