The preparation

7 steps, about 20 minutes start to finish.

    Heat milk to 195-202°F

  2. 02

    Add acid (vinegar or lemon juice)

  3. 03

    Let sit for 30 minutes - curds will form

  4. 04

    Strain through cheesecloth

  5. 05

    Season with salt

  6. 06

    Press lightly for firmer cheese or leave loose

  7. 07

    Use in cooking or serve fresh

“Bring the milk up slowly to just under a boil before you add the acid, since scorched milk carries its flavor into the cheese. Give the curds their full time to separate before straining, and remember the harder you press, the firmer the cheese.”
