The Preparation
Combine garlic cloves and ginger in a food processor.
Blend until a smooth paste forms, adding a small amount of water if needed.
Add salt and pulse to combine.
Transfer paste to a clean glass jar.
Leave at room temperature for 24-48 hours to ferment slightly, loosening the lid to allow gas to escape.
Store in the refrigerator for up to several weeks.
Use as a flavor base for stir-fries, marinades, and sauces.
