Crispy double-fried french fries, golden outside and fluffy within, tossed in seasoning salt.
8 steps, about 45 minutes start to finish.
Cut russet potatoes into fry shapes.
Soak cut potatoes in cold water for 15 minutes to 1 hour to remove starch.
Heat oil to 225-250°F for the first fry.
First fry potatoes for 3-5 minutes until they are cooked through but not browned.
Remove fries and let them rest.
Heat oil to 375°F for the second fry.
Second fry for approximately 2 minutes until golden and crispy.
Toss finished fries with Johnny's seasoning salt.
